Staff Favorite Recipes - Easy Brie Bites From Kala C.

The Kansas City, Kansas Public Library asked their employees for their favorite family recipes and the stories behind them. We'll be featuring them over the coming months. This week's offering is a great budget-friendly snack from Kala.

This invention dates back to a time when I was single, desperate for a snack and trying to feel vaguely refined.

Having grown up in the country and being entertained by mud pies (no, I did not eat them), I’m easily impressed by anything served in a wooden, veneer box. Turns out it is one of my least favorite cheeses cold but my most favorite when melty and warm.

Ingredients:

  • Wheel of Brie

  • Tube of crescent rolls

Instructions:

I take a serrated knife and scrape off as much of the white rind as possible. I do this because it deeply concerns me how many people see a fuzzy science experiment, eat it and think, “Mmm, yes. Five stars!”

After stripping it down to the good stuff (or not), cut the Brie into bite sized pieces.

Cut each crescent roll piece in half. Press the dough out and use it to wrap each piece of Brie, fold corners over, seal well and bake according to the dough directions.
